Tortilla Soup
This Tortilla Soup may not look like much sitting here in my big ol’ pot, but…oh boy, I love it.
The idea is to make up the soup and then to garnish it with lots of yummy toppings!
TORTILLA SOUP:
(Start by Sauteing)
1 TBSP Butter
1 Garlic Clove chopped (ps…I kinda hate garlic, so I just add a little bit)
1/4 tsp. Pepper
1/2 chopped Yellow Onion
IN BIG POT, MIX TOGETHER
2 diced Tomatoes
1/2 tsp. Cumin
1/2 tsp. Chili Powder
1/2 tsp. Oregano or Italian Spice
1 can diced Green Chili or 2 diced fresh chilies
2 Jalapeno Peppers
2 Serrano Cilantro Peppers
2 cups cooked Chicken, cubed (I use 2 Chicken Breast)
1 (49 oz) can Chicken Broth, divided (take 1 cup of broth out and save for later)
Simmer this mixture for 15 minutes
Combine the 1 cup of broth from earlier to 1/2 cup dry masa and mix together….then add to soup mixture
Let heat for additional 15 minutes
TO SERVE:
Put tortilla chips in bottom of bowl, spoon soup mixture over top of chips. Garnish with Sour Cream, Fresh Avacados,
cheese, and olives.—————so YUMMY
